Brave the cold for the one minute stroll from your private chalet to The Phoenix Wing’s breakfast room/restaurant and be rewarded with a hearty buffet breakfast in the cosines of our Canadian style log-cabin. Fill up on a selection of fresh breads, croissants, porridge, yoghurts, eggs, sausage, bacon, hash browns, juices, hot chocolate, teas and coffee. Gazing out onto the beautiful Goryu Forest slowly ease yourself into a day of which ever you choose. Famished after the day’s adventures retreat back to.

With the après-ski chat begging flow why not enjoy a few beverages from our restaurants well stocked bar. A selection of whiskeys, brandies, beers and wines should get everyone in the mood for the evening. Later, continue the revelry at The Phoenix Wings Front Lounge. Comfortable leather couches and wood-burning stove make this the idyllic winter setting.

		The Phoenix Wing for a selection of Western and Japanese style cuisine. Locally sourced produce is carefully prepared to give our guests the ultimate dining experience. Choose your own style from: shabu-shabu, top grade Wagu beef steaks, yogan (hot stone cooking), Shinshu Salmon steaks or sashimi all served with an assortment of fresh vegetables.

■Gourmet Dining

Evening time see’s The Phoenix Wing prepare a delicious selection of Western and Japanese style cuisines. Choose your preferred style from French, Shabu-Shabu (hot pot) and yogan (food cooked right at your table on your very own gas heated volcanic hot stone… not too much of this back home!).

	・	Premium quality Wagyu beef (grade A5) with its distinctive marble effect of fat through beef is unsurpassed for its taste and tenderness… literally melts in your mouth!
	・	Shinshu (Nagano) Salmon, caught daily from the rivers in and around Hakuba
	・	Sashimi (tuna, prawn, crab, scallops) fresh from the Sea of Japan and purchased at neighboring Itoigawa Fish Market
	・	Locally grown organic vegetables
	・	Shinshu soba noodles… reputed to be Japan’s finest

And with a selection of imported wines, top shelf whiskeys and Japanese sake to choose from you just know it’s going to be night worth remembering.

We are also aware that some of our guests are used to spending Christmas by the barbe’. If this is the case, and you’re feeling a bit home sick then The Phoenix Wing can organize your very own private Japanese style charcoal burning barbeque set… it may be a few degrees below what you’re used to but what the hay – Christmas with a down-under twist!
